My taste for pasta hasn’t always been the most refined. I am not Italian, and grew up in an Irish family. It was a family that knew how to cook, but also just used whatever boxed pasta was readily available at the supermarket. Fast-forward twenty years later when I started dating a man with two Italian grandmothers. Pasta was taken seriously, and always made fresh. I became determined to learn how to make it. I tried and failed miserably on multiple occasions, but eventually learned how to make both semolina and egg pasta dough.
